Nutrient Analysis for February 2005 Menu analysis has been created for the daily main menu, and information is based on a weekly average of nutrients . Each day's menu is planned with five components: meat/meat alternate, bread/bread alternate, fruit, vegetable and milk. All students purchasing lunch must have three of the five components on their tray. The analysis is completed for a five day period using all five items offered and an average is calculated. The USDA requires this period of time to contain a specified number of calories with 30% or less from fat, 10% or less from saturated fat.
